Cut the potatoes, carrot, onion, parsley and mint into small pieces. Put all the ingredients except the water in a large saucepan and brown everything for around 5 min. Then add the water in the pot and let everything boil for app. 30 to 40 min until the vegetables are well cooked.
After that, you puree the soup with a hand blender. You can add some more water while blending until you get the right consistence. Season with salt and pepper. Finally serve the warm soup and enjoy.
You can add your favourite spices and a little lemon juice if you like.
