A fast and simple recipe for stuffed peppers.
Brown the onion, garlic, salt, pepper, paprika powder and parsley with the oil in a pan. Fry the ground meat until it is cooked. Boil the rice in a pot. (If you want to serve rice as a side dish, prepare more accordingly). In the meantime clean the peppers and cut of the tops (as displayed in the picture up.) Keep the lids.
To finish the filling mix rice, corn, feta and meat. Fill the peppers with the filling and cover them with their lids. Let them simmer in 600 ml hot water (mixed with tomato paste, salt and pepper), for app. 60 min until the peppers are well cooked. Optimal is a big pot with large pot bottom so the peppers can cook standing and no water is rinsing in.
Now arrange on plates and serve. Bon appetit!
If you like you can gratinated them with cheese.
