A delightful sweet short pastry treat. Warm cookies filled with peach jam and sprinkled with powdered sugar. That’s a version of my basic recipe: short pastry cookies.

Put all ingredients for the dough in one bowl and mix them together. Afterwards the dough has to cool in the fridge for 10 min. Roll out the dough thin with a rolling pin.
Divide the dough on two. From half of the dough you cut out round cookies (these will be the downsides.) The other half needs to be cutted out round first and then you cut out little hearts in the middle (these will be the top parts). The out-cutted hearts you can use for decoration later.
Look at the picture. Right is the top part and left the down part. Now spread all the cookies on a baking tray and bake for app. 15 min in the oven at 180°C.
After they are done you spread a small bit jam on all round downside cookies. Sprinkle the top cookies with powdered sugar and place them on the jammed downside cookies. Now your cookies should look like mine on the pictures. Arrange on a plate and enjoy...
Of course you can fill your cookies with any jam you like or with melted chocolate for example.
The cookies always taste best the next day. You can keep them in a dry place overnight and then enjoy.
