Quickly knead a smooth shortcrust pastry from the eggs, flour, butter, salt and sugar. Chill for 30 min.
Mix milk, sugar, white chocolate and vanilla sugar in a saucepan and heat over medium-high. Sift in the flour while stirring constantly and then bring the pudding to boil.
Peel the apples and cut into cubes. Roll out the shortcrust pastry on a baking sheet layed out with baking paper. Close with a if you have. Spread a half of the vanilla pudding on top. Lay it out with the apple slice and cover them with the second part of the pudding.
Quickly mix the crumble ingredients together (by hand if you like). Then spread the crumbles evenly on the apple cake and bake in the preheated oven on the middle rack at 180°C top/bottom heat for about 50 minutes until the crumbles are lightly browned.
