Easy Pumpkin Muffins Recipe with Chocolate Chips

Ingredients:

step by step method:

1st step: 

Cook the pumpkin flesh in a saucepan in water until the pumpkin flesh is soft. Then drain from water, and puree it.

2nd step: 

Beat the butter with the brown and white sugar and vanilla sugar until light and creamy. Fold in the eggs and salt. Mix in the pumpkin puree with a sip of milk. Then add flour, cinnamon and baking powder and mix everything to a fluffy batter. Last, fold in two thirds of the chocolate chips.

3rd step: 

Prepare a muffin tin with paper cupcake liners and divide the batter onto approx. 15. The cupcake liners should be filled by two thirds. (Works best with an ice cream scoop.) Now sprinkle the remaining chocolate chips on the cupcakes. Bake them at 180 degrees top and bottom heat, for about 20 minutes. Enjoy your treat... :)

tips & variations:

  • You can also prepare a cream cheese frosting if you’d like to enjoy with the cupcakes, or spread some jam on top. But honestly, they taste just as delicious on their own!
