Pumpkin Bread with Lotus Spread / Perfect Fall Recipe

Ingredients:

step by step method:

1st step: 

First, cook the pumpkin flesh in the water. Once the pumpkin flesh is tender, drain the water and puree the flesh.

2nd step: 

Mix the lukewarm milk, sugar and the yeast in a small bowl and let it soak for 3 min. Add this mixture and the butter into the pumpkin puree. Then combine this with the remaining ingredients. Grease a loaf pan with some butter and fill in the dough. Let it rise until the volume has doubled (approx. 30 - 40 min.) Bake at 170°C for 40 to 50 minutes.

3rd step: 

Let the bread cool slightly before slicing. Enjoy it while it's still warm, and if you'd like, spread some lotus spread on top. If you heat the spread up a little, it is easier to spread. I think it's the perfect combination of flavors!

Tips & variations:

  • You can add a little bit of saffron for a deeper orange color. Just dissolve a few saffron threads (only some) in warm water or milk before adding it to the batter.
