This is a super light and delicious spring mandarin butterfly cake. It is very fluffy and simple to make. The mandarins gives it a fresh taste. Perfect for teatime!

Whip the eggs, salt, sugar and vanilla sugar for 5 minutes. Mix the flour and baking powder and melt the butter. (Let the butter cool lukewarm before adding.) Add both to the egg mixture. Mix in quickly and pour the dough into the cake pan.
Then bake at 150 °C circulating air for about 20 minutes. Now flip the cake on a plate and let it cool down. Whip the cream and puree the cold pudding. Then pass it through a sieve. Whisk the cream into the pudding. (Make sure that both are about the same temperature so the cream combines well.) Now cut the mandarins for the cream in small pieces and add them to the cream.
Spread the cream on the cake and finally decorate it: Peel the mandarins and place them on the cake so they look like small butterflies. Cut feelers out of the chocolate and add them. Finally sprinkle the chocolate sprinkles over the cake and enjoy...
