A classic german banana cream cake. It’s called “Maulwurfs-Kuchen” which means: Moles Cake. Because of the cake looking like a big molehill. Super delicious and easy to make. Also great for kids.

Mix the butter, sugar and vanilla sugar to a light yellow mass. Then stir in the eggs step by step. Stir the dry ingredients, add them and the milk to the dough Always stir. Then pour the dough into a 26 cm. diameter springform pan and bake the cake at 180 °C top and bottom heat for 25 to 30 minutes. The cream is prepared during baking.
Whip the cream with the cream stabilizer, vanilla sugar and powdered sugar. Then fold in the chocolate chips. When the cake has cooled down, make a round cut (do not cut through), leave 2 cm edge and then spoon it out.
Crumble up the leftover cake in an extra bowl. Now peel the bananas and slice them long once. Lay out the carved out cake area with the bananas. Now, the cream has to be put on, form a hill. Then cover it with the cake crumbs. The super simple mole cake is ready.
The cake also tastes great with strawberries or raspberries instead of bananas.
